2008-09 Syllabus
Culinary Arts will be taught and run as if it is a food service business. You will learn as you do in the work environment.
I. Class Fee
A. Activity Fee of $20.00 is to be paid by September 15, 2008. The
Activity Fee will be included in your grade.
II. Dress Code–When you are in the kitchen you are to wear the following:
A. Clean Kitchen Apron and baseball type hat. An apron and hat will be
given to you but you are responsible to keep them clean.
B. Long Pants – No shorts, skirts, short dresses, or Capri pants
C. Closed front shoes with rubber soles (no sandals or platform shoes)
D. You are expected to wear clean clothing including your apron.
III. Class Room Rules
A. Since our main goal is teamwork, we will follow this simple rule at all
times. We are to treat others, as we would have them treat us.
Language will be kept clean and non-abusive at all times.
B. Since we are using sharp knives and dangerous equipment, safety is
our highest priority. Kitchen equipment will be used as instructed and
any behavior that is deemed by the teacher to be unsafe is not
permitted.
C. You are expected to be in the classroom for the entire period. If you
need to leave the classroom for any reason, prior approval of the
teacher is required.
D. Cell phones and all portable music devices are not allowed in class.
IV. Personal Hygiene
A. Because we will be preparing food, it is required that you follow the
personal hygiene rules you will be taught in class.
B. Long fingernails, fingernail polish, rings, wrist bands and excessive
jewelry are a health concern and so will not be permitted during class
periods or events.
V. Grades
A. Daily Class Participation 35%
1. Dress Code & Personal Hygiene, Appropriate Behavior, Classroom
work.
B. Required Extra Activities 30%
1. Serving Lunches, Home Based Projects, Fund Raising Events
C. Written Sanitation Exams 10%
D. Text Book Assignments & Tests 15%
E. Culinary Fees 10%
