Spaghetti Meat Sauce Serves 8

 

1# Hamburger Meat
24oz Tomato Sauce
20oz Tomato Soup
12oz Tomato Paste
½ onion diced or 1 tablespoon onion powder
2 tablespoon s Minced garlic or powder
3 tablespoons Italian Seas.
1 tsp sugar
¼ tsp cayenne pepper or 1tsp Tabasco
Salt to taste

Brown meat and drain fat.
Add garlic, onion, Italian Seasoning, Cayenne Pepper & sugar
Add tomato products and 12oz water
Bring to a boil then reduce to low simmer for about 2 hours.

 

Fetticine Alfredo sauce Serves 8

 

2 sticks of butter, salted
½ tsp garlic
1 tsp Italian Seasoning
¼ tsp black pepper
Sprinkle of red pepper
¼ tsp lemon juice

Mix together. Add 2 tblsp all-purpose flour. Blend well.
Add heavy whipping cream or half-n-half(24 ounces) mix in 1 cup Romano or Parmesan (shredded doesn’t mix as well.)
Add salt to taste (about ¼ tsp)
Simmer on low.
Before serving add a small amount of milk.

 

 Wheat Crust Pizza Dough
7# Bread Flour
7# Wheat Flour
6oz Yeast
8# Water
5oz Salt
2oz Sugar
1oz Brown Sugar
5oz Oil

Single Pizza
1 ½ Cups Bread Flour
1 ½ Teaspoons Yeast
½ Teaspoon Salt
½ Teaspoon Sugar
2 Teaspoons Oil
5 Ounces Water

• Combine water, yeast, sugar, and oil and set aside.
• Sift flour and salt in a large mixing bowl
• Add liquid mixture and knead until smooth (about 19 minutes)
• Allow to stand covered with a wet towel for 30 minutes.
• Knead an additional 5 minutes and form into your shell.

6#12oz water
2 oz yeast
4 oz salt
8# Bread flour
4.5# Wheat Flour
6.5oz Brown sugar

Cranberry Bagels
1.75oz yeast
9.5oz sugar
4oz salt
12.5# bread flour
2 cups Dried Cranberries
6#10oz water

ITALIAN BREAD

2oz sugar

8# Warm Water

BUTTERMILK PANCAKES
3# Flour
4tsp Salt
12oz Sugar
2 tbl Baking Soda
4 tbl Baking Powder
96oz Buttermilk (or milk)
12 eggs
6oz melted Butter

1.Mix Dry Ingredients,
2. In a separate bowl mix wet ingredients
3. Add wet to dry and mix
4. Use 2oz ladle

Bran Muffins
3 1/2 cups Raisin Bran (or Bran Flakes)
1/2 teaspoon salt
2 1/2 cups all purpose flour (or whole wheat)
1/2 cup canola oil (or ¼ cup oil & ¼ cup applesauce)
1 1/2 cups sugar (or Splenda)
2 1/2 teaspoons baking soda
2 eggs
2 cups buttermilk
1 teaspoon vanilla
1/2 teaspoon cloves
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Preheat oven to 400 degrees. Place all ingredients in a large bowl and mix well. Fill muffin tins 2/3 full. Bake 15 minutes.


CINNAMON ROLLS
1# 10oz butter
1# 11oz Sugar
3oz Yeast
12oz Hot Water
9.25# Bread Flour
1oz Salt
10oz Egg Yolk
64oz Buttermilk

Cinnamon Roll Butter
4# Butter
1.5# Brown Sugar
1.5# Granulated Sugar
3 oz. Cinnamon
1 Cap Vanilla

CARROT CAKE:
1 1/2 cup or 12oz oil
3 cups grated carrots
2 tsp baking powder
2 tsp cinnamon
1 tsp vanilla
2 cups granulated sugar
2 cups flour
2 tsp baking soda
1 tsp salt
4 eggs
1 cup walnuts or pecans (opt)
Blend oil and sugar. Add eggs one at a time.
Add sifted dry ingredients. Add carrots, nuts,
And vanilla. Bake 40-50 minutes at 300 degrees. Let cool.#

CREAM CHEESE ICING:
1 8oz package of cream cheese
1/4lb of butter
2 tsp or oz vanilla
2 cups or oz powdered sugar
1/4 cup or oz chopped nuts (opt)
Cream butter and cream cheese together. Blend powdered sugar and vanilla into creamed mixture. Add nuts (opt)


 

PIE CRUST
5# pastry flour
3.5 # sweetex
1.5# Ice Water
1½oz salt
4oz sugar

Cheese Cake
12# Cream Cheese 3#
3.5oz Corn Starch 1oz
5oz flour 1.25oz
38oz sugar 9.5oz
24 eggs 6
Lemon Juice

Cream Cheese and sugar
Add eggs
Add Flour, Corn Starch, Lemon Juice
• Bake on parchment paper with pan in water.
• Bake at 400 uncovered 5-7 minutes or until light brown
• Reduce to 275 for aprox. 3 hrs

4oz sweetex
2# sugar
1oz Salt
18oz bread flour
4# 12oz all purpose flour
3 1/4oz baking powder
12oz egg yolk
34oz buttermilk
1oz vanilla

TRUFFLES
1# chocolate chips
8oz heavy cream
Heat heavy cream
Add chips…blend until smooth.

Chocolate Oatmeal Cookies

16oz eggs
.75oz salt
4oz milk
½ oz Vanilla

1oz baking soda

2 Cups Cocoa Powder

BROWNIES

1# Margarine (melted)
2# sugar
4 tsp. Vanilla
8 eggs (1 lb)
9.5oz flour
4oz cocoa powder
1 tsp baking soda
1 tsp salt

Directions
1. preheat oven to 335
2. cream together butter sugar and vanilla
3. mix in eggs slowly. mix very well
4. add all other ingredients
5. spread batter in greased pan.
6. Bake aprox. 20 minutes


CREAMY BROWNIE FROSTING

¾# Butter, softened
12 tablespoons Cocoa
2oz light corn syrup or honey
2 caps vanilla extract
4cup powdered sugar
2oz milk

1. Beat butter, cocoa, corn syrup and vanilla in small bowl until blended.
2. Add powdered sugar and milk; beat to spreading consistency.
3. About 4 cup frosting.

SUGAR COOKIES

1# Butter
1# Shortening
2½# Sugar
¾oz salt

8oz Eggs
8oz Milk
1oz Vanilla

5# Cake Flour
½oz Baking Powder

1. Cream butter, shortening, sugar and salt until smooth.
2. Add eggs, milk, and vanilla and mix thoroughly.
3. Add cake flour and baking powder.
4. Roll out dough and cut into shapes.
5. Brush cookies with milk and spinkle
6. Bake at 335
